Instructions

  1. Start by seasoning your chicken breasts with salt and pepper.
  2. In a large skillet, heat some olive oil or butter over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes per side, or until they’re golden brown and cooked through. Remove them from the skillet and set aside.
  3. In the same skillet, add a bit more oil if necessary, and toss in your sliced mushrooms. Sauté them for 5-6 minutes until they are golden and have released their moisture.
  4. Add minced garlic and fresh thyme to the mushrooms. Cook for an additional minute until fragrant.
  5. Lower the heat and pour in the chicken broth, scraping the bottom of the skillet to deglaze it. Let this simmer for a couple of minutes.
  6. Slowly stir in the heavy cream. Allow it to simmer for another 3-4 minutes until the sauce thickens. If you want it thicker, you can add a cornstarch slurry (1 tablespoon of cornstarch mixed with 2 tablespoons of water).
  7. Return the cooked chicken to the skillet, spooning the sauce over it. Let it cook together for a couple of minutes to meld the flavors.
