Ingredients
- Boneless, skinless chicken breasts

Instructions
- Start by seasoning your chicken breasts with salt and pepper.
- In a large skillet, heat some olive oil or butter over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes per side, or until they’re golden brown and cooked through. Remove them from the skillet and set aside.
- In the same skillet, add a bit more oil if necessary, and toss in your sliced mushrooms. Sauté them for 5-6 minutes until they are golden and have released their moisture.
- Add minced garlic and fresh thyme to the mushrooms. Cook for an additional minute until fragrant.
- Lower the heat and pour in the chicken broth, scraping the bottom of the skillet to deglaze it. Let this simmer for a couple of minutes.
- Slowly stir in the heavy cream. Allow it to simmer for another 3-4 minutes until the sauce thickens. If you want it thicker, you can add a cornstarch slurry (1 tablespoon of cornstarch mixed with 2 tablespoons of water).
- Return the cooked chicken to the skillet, spooning the sauce over it. Let it cook together for a couple of minutes to meld the flavors.
- Finish with freshly chopped parsley and a sprinkle of Parmesan cheese if desired.
