Description

These Easy Caramel Cookie Bars are a delightful blend of chewy cookie goodness and rich, gooey caramel. Perfect for any occasion, they are simple to make and utterly irresistible!

Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel sauce
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper for easy removal later.
  2. In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs, one at a time, ensuring they are fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. Spread half of the cookie dough into the bottom of the prepared baking pan and smooth it out evenly.
  6. Drizzle the caramel sauce over the cookie dough layer, spreading it gently to the edges if needed.
  7. Sprinkle the chocolate chips over the caramel layer.
  8. Take spoonfuls of the remaining cookie dough and drop it over the chocolate chips and caramel, allowing some caramel and chocolate to remain exposed.
  9. Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  10. Allow the bars to cool in the pan for at least 30 minutes. Once cooled, lift them out using the parchment paper and cut them into squares or rectangles.

Keywords: Don't overmix the dough to keep the bars tender. If using homemade caramel, ensure it's not too thick for easy spreading. Refrigerate for easier cutting if needed.
