These Easy Caramel Cookie Bars are a delightful blend of chewy cookie goodness and rich, gooey caramel. Perfect for any occasion, they are simple to make and utterly irresistible!
Ingredients
Scale
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup caramel sauce
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper for easy removal later.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs, one at a time, ensuring they are fully incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Spread half of the cookie dough into the bottom of the prepared baking pan and smooth it out evenly.
- Drizzle the caramel sauce over the cookie dough layer, spreading it gently to the edges if needed.
- Sprinkle the chocolate chips over the caramel layer.
- Take spoonfuls of the remaining cookie dough and drop it over the chocolate chips and caramel, allowing some caramel and chocolate to remain exposed.
- Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool in the pan for at least 30 minutes. Once cooled, lift them out using the parchment paper and cut them into squares or rectangles.

Keywords: Don't overmix the dough to keep the bars tender. If using homemade caramel, ensure it's not too thick for easy spreading. Refrigerate for easier cutting if needed.
