- Wrap the dough in plastic wrap and refrigerate for at least an hour.
- In a separate bowl, beat 8 ounces of cream cheese until smooth.
- Gradually add ½ cup of powdered sugar and mix until well combined. Optionally, add a splash of vanilla extract for extra flavor.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take the chilled dough and scoop out about 2 tablespoons for each cookie. Flatten it slightly in your palm and place a teaspoon of the cheesecake filling in the center. Enclose the filling by folding the dough over it and roll it into a ball.
