Instructions

  1. Start by cutting the cauliflower into small florets. Rinse them under cold water and let them drain well.
  2. Bring a pot of salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes until they are bright and just tender. Drain and immediately plunge them into an ice bath to stop the cooking process.
  3. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add the chopped fresh herbs (parsley and dill) and mix well.
  4. Once the cauliflower is cool, add it to the bowl with the marinade. Toss everything together until the cauliflower is well-coated in the marinade.
  5. Gently fold in the halved cherry tomatoes and sliced red onion.
  6. Cover the bowl and let the salad marinate in the refrigerator for at least 30 minutes.
