Instructions
- Start by cutting the cauliflower into small florets. Rinse them under cold water and let them drain well.
- Bring a pot of salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes until they are bright and just tender. Drain and immediately plunge them into an ice bath to stop the cooking process.
- In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add the chopped fresh herbs (parsley and dill) and mix well.
- Once the cauliflower is cool, add it to the bowl with the marinade. Toss everything together until the cauliflower is well-coated in the marinade.
- Gently fold in the halved cherry tomatoes and sliced red onion.
- Cover the bowl and let the salad marinate in the refrigerator for at least 30 minutes.
- After marinating, give the salad another gentle toss and taste. Adjust seasoning if necessary, then serve chilled or at room temperature.
