- Freshly grated Parmesan cheese
- Cloud bread (made primarily of eggs and cream cheese)
- Garlic powder

- Italian seasoning
- Olive oil
- 3 egg whites
- 3 oz of cream cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, separate 3 egg whites from the yolks. Beat the egg whites until stiff peaks form, then in another bowl, mix the yolks with 3 oz of cream cheese until smooth. Gently fold the egg whites into the yolk mixture until combined. Spread this mixture onto a parchment-lined baking sheet to form small, round clouds. Bake for 20 minutes until golden.
- While the cloud bread is baking, chop your chicken breasts into bite-sized pieces. In a mixing bowl, combine the chicken with olive oil, grated Parmesan, garlic powder, onion powder, and Italian seasoning. Mix well to ensure each piece is coated.
- Once the cloud bread is ready, take it out of the oven and let it cool slightly. Place a spoonful of the chicken mixture in the center of each cloud. Gently fold the edges over the filling to create a little pouch.
- Place the assembled chicken bombs back on the baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the chicken is fully cooked and the tops are golden brown.
- Once cooked, let them cool for a few minutes and serve warm. They pair wonderfully with a side of marinara sauce for dipping!
