Instructions
- Preheat your oven to 350°F (175°C).
- If using pre-made sugar cookie dough, roll it out and press it into the bottom of a 9-inch springform pan. If making from scratch, combine 2 cups of flour, 1 cup of sugar, 1/2 cup of softened butter, and 1 teaspoon of vanilla. Mix until crumbly, then press into the bottom of the pan.
- Bake for 10-12 minutes until lightly golden. Allow it to cool completely.
- In a large mixing bowl, beat together 16 ounces of softened cream cheese and 1 cup of sugar until smooth and creamy.
- Add in 1 cup of sour cream, 3 large eggs (or your egg substitute), and 1 teaspoon of vanilla extract. Mix until everything is well combined and the mixture is smooth.
- Pour the cheesecake filling over the cooled sugar cookie crust.
- Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for about an hour to prevent cracking.
- After it has cooled, remove it from the oven and refrigerate for at least 4 hours, or ideally overnight.
