- 1 pound of boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup of cherry tomatoes, halved
- 1 cup of fresh spinach
- 1/2 cup of feta cheese, crumbled
- 1 lemon, juiced
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with a paper towel.
- In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper.
- Drizzle olive oil over the chicken and coat evenly. Rub the spice mixture onto the chicken.
- Heat a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Remove the skillet from heat. Add halved cherry tomatoes and fresh spinach around the chicken.
- Squeeze lemon juice over the chicken and vegetables.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes.
- Sprinkle crumbled feta cheese over the chicken and vegetables.
- Garnish with fresh basil leaves if desired.
- Serve alongside roasted tomatoes and wilted spinach, drizzled with any remaining juices from the skillet.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
