  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup of cherry tomatoes, halved
  • 1 cup of fresh spinach
  • 1/2 cup of feta cheese, crumbled
  • 1 lemon, juiced
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel.
  3. In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper.
  4. Drizzle olive oil over the chicken and coat evenly. Rub the spice mixture onto the chicken.
  5. Heat a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  6. Remove the skillet from heat. Add halved cherry tomatoes and fresh spinach around the chicken.
  7. Squeeze lemon juice over the chicken and vegetables.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  10. Sprinkle crumbled feta cheese over the chicken and vegetables.
  11. Garnish with fresh basil leaves if desired.
  12. Serve alongside roasted tomatoes and wilted spinach, drizzled with any remaining juices from the skillet.
