- 4 large eggs
- 1/2 cup cooked and crumbled breakfast sausage (optional)
- 1/2 cup diced bell peppers (any color)
- 1/4 cup sliced black olives (optional)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Split the English muffins in half and place them cut-side up on a baking sheet lined with parchment paper.
- Spread about 2 tablespoons of pizza sauce on each muffin half.
- Sprinkle shredded mozzarella cheese over the sauce, covering it completely.
- If using, add the crumbled breakfast sausage evenly over the cheese.
- Scatter the diced bell peppers across the muffins.
- If desired, add sliced black olives on top.
- In a small bowl, beat the eggs with garlic powder, onion powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper.
- Carefully pour a beaten egg over each muffin half, keeping it contained on top of the toppings.
- Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the egg whites are set and yolks are cooked to your liking.
- For extra color, switch the oven to broil for the last 1-2 minutes, watching closely to prevent burning.
- Remove from the oven and let cool for a minute.
- Garnish with fresh basil or parsley if desired.
- Serve immediately while warm, either on individual plates or family-style on a platter.
