  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup sliced black olives (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Split the English muffins in half and place them cut-side up on a baking sheet lined with parchment paper.
  3. Spread about 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese over the sauce, covering it completely.
  5. If using, add the crumbled breakfast sausage evenly over the cheese.
  6. Scatter the diced bell peppers across the muffins.
  7. If desired, add sliced black olives on top.
  8. In a small bowl, beat the eggs with garlic powder, onion powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper.
