- 4 ripe peaches, peeled, pitted, and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 large egg
- 1 teaspoon almond extract (optional)
- Whipped cream or vanilla ice cream for serving (optional)
Instructions
- Wash the peaches thoroughly under cool running water to remove any dirt or residue.
- Using a sharp knife, carefully peel the peaches. Make a small incision at the top and slide the knife down to remove the skin.
- Cut the peaches in half and remove the pit. Slice the peaches into thin wedges, about 1/4-inch thick.
- In a medium bowl, combine the sliced peaches with 1/2 cup of granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt. Toss gently until the peaches are well coated. Set aside.
- In a large mixing bowl, combine the all-purpose flour, remaining 1/2 cup of granulated sugar, and baking powder. Whisk until well mixed.
- In a separate bowl, whisk together the melted butter, milk, egg, and almond extract (if using). Ensure the butter isn’t too hot to avoid cooking the egg.
- Pour the wet ingredients into the dry ingredients. Gently mix until just combined; a few lumps are fine.
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
- Pour the peach mixture into the bottom of the prepared baking dish, spreading it out evenly, including all the juices.
- Gently pour the batter over the peaches without stirring. The batter will spread as it bakes.
- Optionally, sprinkle a little additional cinnamon on top of the batter.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- If the top browns too quickly, cover it loosely with aluminum foil.
- Once baked, remove from the oven and let cool for 10-15 minutes.
- Cut into squares using a spatula and serve warm, optionally with whipped cream or vanilla ice cream.
