  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 3/4 cup warm water (about 110°F or 43°C)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour and salt.
  3. Once the yeast mixture is frothy, add it to the flour mixture along with the olive oil. Stir until a shaggy dough forms.
  4. Transfer the dough onto a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic. Add more flour if the dough is too sticky.
  5. Form the dough into a ball and place it in a greased bowl, turning to coat. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. In a small saucepan over low heat, melt the unsalted butter.
  7. Remove from heat and stir in the minced garlic, oregano, parsley, and red pepper flakes. Let sit for a few minutes.
  8. Preheat your oven to 375°F (190°C).
  9. After the first rise, punch down the dough and roll it out into a rectangle about 1/2 inch thick.
  10. Cut the dough into strips about 1 inch wide.
  11. Place the strips on a greased baking sheet, leaving space between each stick.
  12. Cover the breadsticks with a towel and let them rise for another 20-30 minutes.
  13. After the second rise, brush the tops with the garlic butter mixture and sprinkle with Parmesan cheese if desired.
  14. Bake for 15-20 minutes, or until golden brown.
  15. Remove from the oven and brush with any remaining garlic butter.
  16. Allow to cool slightly before serving. Best enjoyed warm.

  18. Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in the oven to regain crispiness.
