  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by taking the chicken breasts out of the refrigerator. Let them sit at room temperature for about 15-20 minutes to ensure even cooking.
  2. Season both sides of the chicken breasts generously with salt and pepper.
  3. Pound the chicken breasts to an even thickness using a meat mallet or rolling pin, placing them between two sheets of plastic wrap or parchment paper.
  4. In a large skillet, heat the olive oil over medium-high heat for about 2 minutes until shimmering.
  5. Carefully place the chicken breasts in the skillet and cook for about 6-7 minutes on one side without moving them.
  6. Flip the chicken breasts and cook for another 6-7 minutes on the other side until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the skillet and cover loosely with aluminum foil to keep warm.
  8. In the same skillet, reduce the heat to medium and add the butter, scraping up any browned bits from the bottom of the pan.
  9. Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  10. Sprinkle in the dried thyme, oregano, and paprika, stirring to combine and cook for another minute.
  11. Pour in the chicken broth and lemon juice, stirring to combine. Let the sauce simmer for about 3-4 minutes to reduce slightly.
  12. Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes to absorb the flavors.
  13. Taste the sauce and adjust seasoning if necessary, adding more salt or lemon juice as desired.
  14. Plate the chicken and drizzle the garlic butter sauce over the top. Garnish with freshly chopped parsley.
