Description

This Garlic Cauliflower Mushroom Skillet features tender cauliflower and earthy mushrooms sautéed with garlic and herbs, finished with lemon juice and fresh parsley. It’s a flavorful side dish or a hearty vegetarian main, perfect for pairing with grilled meats or enjoyed on its own.

Ingredients

Scale
  • 1 medium head of cauliflower, cut into florets
  • 8 ounces of mushrooms, sliced (cremini or button mushrooms preferred)
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter (optional for extra richness)
  • 1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes (optional for a bit of heat)
  • Fresh parsley, chopped (for garnish)
  • Juice of half a lemon (for brightness)

Instructions

  1. Wash the cauliflower thoroughly under cold water, then cut it into bite-sized florets.
  2. Slice the mushrooms into 1/4-inch thick pieces and mince the garlic.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the cauliflower florets to the skillet and sauté for 5-7 minutes until they start to soften and turn golden.
  5. Add the sliced mushrooms and cook for another 5 minutes, allowing them to release moisture and steam the cauliflower.
  6. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Sprinkle in the dried thyme, salt, pepper, and red pepper flakes (if using), stirring to combine.
  8. If using, add the butter to the skillet and stir until melted and combined.
  9. Squeeze the juice of half a lemon over the mixture and stir to combine all flavors.
  10. Taste and adjust seasoning as needed.
  11. Remove from heat and let sit for a minute before serving.
  12. Transfer to a serving dish and garnish with freshly chopped parsley.
  13. Serve warm, pairing it with grilled chicken, fish, or enjoy it as a hearty vegetarian option.
  14. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheating in a skillet with a splash of water or broth.

Notes

  • For added flavor, consider using fresh herbs instead of dried.
