- 2 pounds of russet potatoes
- 1 medium onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil (for frying)
- Applesauce or sour cream (for serving)
Instructions
- Peel the russet potatoes and rinse them under cold water.
- Grate the potatoes and squeeze out excess moisture using a kitchen towel.
- Grate or finely chop the onion.
- In a large bowl, combine grated potatoes and onion.
- Add eggs, flour, baking powder, salt, and pepper. Mix until well combined.
- Heat a skillet over medium heat and add vegetable oil.
- Once hot, scoop 1/4 cup of batter into the pan, flatten slightly, and fry for 3-4 minutes until golden brown.
- Flip and cook for another 3-4 minutes. Transfer to a paper towel-lined plate.
- Serve hot with applesauce or sour cream.
