  • 1/2 cup brown sugar, packed
  • 1/2 cup Greek yogurt (plain, non-fat or full-fat)
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • Cooking spray or parchment paper for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, whisk together the granulated sugar and brown sugar until smooth.
  4. Add the Greek yogurt, applesauce, eggs, and vanilla extract to the sugar mixture and whisk until well combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. If using, fold in the chocolate chips.
  6. Prepare an 8×8 inch baking pan by greasing it or lining it with parchment paper.
  7. Pour the brownie batter into the prepared pan and spread it evenly.
  8. Bake for 25-30 minutes, checking for doneness at the 25-minute mark with a toothpick.
  9. Let the brownies cool in the pan for 10-15 minutes before lifting them out using the parchment paper.
  10. Cut into squares and serve. Optionally, dust with powdered sugar or serve with ice cream.
