- 1/2 cup Greek yogurt (plain, full-fat or low-fat)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium-sized mixing bowl, whisk together the flour, baking soda, and salt.
- In a separate large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer on medium speed for 2-3 minutes until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
- Fold in the Greek yogurt until well combined.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing.
- Fold in the chocolate chips until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Store completely cooled cookies in an airtight container at room temperature for up to a week.
- For longer storage, freeze cookies in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be frozen for up to 3 months. Thaw at room temperature or microwave for a few seconds before enjoying.
