  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

  • 1 cup cooked rice (white or brown)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 teaspoon taco seasoning (optional)
  • 1 tablespoon olive oil or butter (for grilling)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked ground beef, cooked rice, black beans, corn, diced tomatoes, and chopped cilantro. If you’re using taco seasoning, sprinkle it in now. Mix everything together until well combined. Taste the mixture and add salt and pepper as needed.
  2. Next, add the shredded cheddar and mozzarella cheese to the filling mixture. This will help bind everything together and create that delicious cheesy goodness when we grill the burrito.
  3. Once everything is mixed, set the filling aside while we prepare the tortillas.
  4. Take your large flour tortillas and lay them flat on a clean surface. If you want to make them a bit more pliable, you can warm them in the microwave for about 10-15 seconds.
  5. Divide the filling mixture evenly among the tortillas. Make sure to leave some space around the edges to make rolling easier.
  6. To roll the burrito, fold in the sides of the tortilla over the filling, then roll it up from the bottom, tucking it in as you go. Make sure to roll it tightly to keep all the delicious filling inside. Repeat this process for all four tortillas.
  7. Heat a large skillet or griddle over medium heat. Add a tablespoon of olive oil or butter to the pan.
  8. Once the oil is hot, carefully place the burritos seam-side down in the skillet.
