  • 2 cups cooked rice (white or brown, your choice)
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup bell peppers, sliced (any color)
  • 1/4 cup green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
  2. Add the minced garlic and grated ginger to the skillet. Stir and cook for an additional 1-2 minutes, being careful not to let them burn.
  3. Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Cook for about 5-7 minutes, or until browned and no longer pink, stirring occasionally.
  4. While the beef cooks, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and water in a small bowl to create the teriyaki sauce.
  5. Once the beef is fully cooked, pour the teriyaki sauce over the beef mixture in the skillet. Stir well and allow to simmer for about 3-5 minutes, or until the sauce thickens slightly, stirring occasionally.
  6. Prepare the vegetables: If using fresh broccoli, steam it for about 3-4 minutes until bright green and tender-crisp. If using frozen, microwave according to package instructions.
  7. In a separate pan, add a splash of water or a little oil and sauté the sliced bell peppers over medium heat for about 5 minutes, until tender but still crunchy. You can add the steamed broccoli to this pan for a minute or two to combine flavors.
  8. Assemble your meal prep containers: Start with a scoop of cooked rice (about 1/2 cup per serving) at the bottom of each container.
  9. Spoon a generous portion of the teriyaki ground beef mixture over the rice, including some sauce for flavor.
  10. Add the sautéed bell peppers and steamed broccoli on top of the beef for color and nutrition.
  11. Finish by sprinkling chopped green onions and sesame seeds over each container for added crunch and flavor.
