- 1 cup bell peppers, sliced (any color)

Instructions
- In a large skillet, heat the vegetable oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
- Add the minced garlic and grated ginger to the skillet. Stir and cook for an additional 1-2 minutes, being careful not to let them burn.
- Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Cook for about 5-7 minutes, or until browned and no longer pink, stirring occasionally.
- While the beef cooks, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and water in a small bowl to create the teriyaki sauce.
- Once the beef is fully cooked, pour the teriyaki sauce over the beef mixture in the skillet. Stir well and allow to simmer for about 3-5 minutes, or until the sauce thickens slightly, stirring occasionally.
- Prepare the vegetables: If using fresh broccoli, steam it for about 3-4 minutes until bright green and tender-crisp. If using frozen, microwave according to package instructions.
- In a separate pan, add a splash of water or a little oil and sauté the sliced bell peppers over medium heat for about 5 minutes, until tender but still crunchy. You can add the steamed broccoli to this pan for a minute or two to combine flavors.
- Assemble your meal prep containers: Start with a scoop of cooked rice (about 1/2 cup per serving) at the bottom of each container.
- Spoon a generous portion of the teriyaki ground beef mixture over the rice, including some sauce for flavor.
- Add the sautéed bell peppers and steamed broccoli on top of the beef for color and nutrition.
- Finish by sprinkling chopped green onions and sesame seeds over each container for added crunch and flavor.
- Let the meal prep containers cool to room temperature before sealing with lids to prevent condensation.
