- 1 pound ground turkey
- 2 medium zucchinis, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Gather all ingredients. Dice zucchinis, chop onion and bell pepper, and mince garlic. Open the can of diced tomatoes and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add ground turkey to the skillet, breaking it up with a spatula. Cook for 5-7 minutes until no longer pink, stirring occasionally.
- Season with salt, pepper, Italian seasoning, and paprika. Stir well to combine.
- Once turkey is cooked, add diced zucchini to the skillet and mix well.
- Pour in the can of diced tomatoes (with juice) and stir everything together. Bring to a gentle simmer, cover, and cook for 5-7 minutes until zucchini is tender but still slightly crunchy.
- If using mozzarella cheese, sprinkle it over the skillet, cover, and cook for another 2-3 minutes until melted and bubbly.
- Remove from heat and let sit for a minute. Garnish with fresh basil or parsley before serving. Enjoy warm, either on its own or with a side of rice, quinoa, or salad.
