These Healthy Strawberry Oatmeal Bars are a nutritious and tasty option for breakfast or snacks. Made with rolled oats, whole wheat flour, and fresh strawberries, they are naturally sweetened and can be customized with nuts and fruits. Perfect for on-the-go or a light dessert!

- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries, hulled and chopped
- 1/4 cup chopped nuts (optional, such as almonds or walnuts)
- 1/4 cup shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing.
- Gently fold in chopped strawberries, and if desired, chopped nuts and shredded coconut.
- Line an 8×8 inch baking dish with parchment paper or lightly grease it with coconut oil.
- Transfer the batter into the prepared baking dish, spreading it evenly and pressing it down gently.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper and cool completely on a wire rack.
- Once cool, cut into squares or rectangles as desired.
- Store in an airtight container at room temperature for a few days, in the refrigerator for up to a week, or freeze individually wrapped bars for longer storage.
- Serve as is or with Greek yogurt or nut butter for an extra treat.
