  • 2 pounds baby potatoes (or small Yukon Gold potatoes)
  • 6 slices of thick-cut bacon
  • 1/4 cup honey
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the baby potatoes under cold water and pat them dry. If using larger Yukon Gold potatoes, cut them into quarters. Leave baby potatoes whole or cut in half if larger.
  3. In a large pot, cover the potatoes with cold water and add a pinch of salt. Bring to a boil, then reduce heat and simmer for 10-15 minutes until fork-tender.
  4. Drain the potatoes in a colander and let them cool for a few minutes.
  5. Chop the bacon into small pieces and cook in a skillet over medium heat until crispy, about 5-7 minutes. Drain on paper towels, leaving 1 tablespoon of bacon fat in the skillet.
  6. In a small bowl, whisk together honey, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir in the crispy bacon pieces.
  7. In a large bowl, add the drained potatoes and pour the honey-bacon mixture over them. Gently toss to coat.
  8. Line a baking sheet with parchment paper or grease it lightly.
  9. Transfer the coated potatoes to the baking sheet in a single layer.
  10. Roast for 25-30 minutes, tossing halfway through for even browning.
  11. After 25-30 minutes, check for golden brown and crispy texture. Roast longer if needed, checking frequently.
  12. Let cool for a few minutes, then transfer to a serving dish and garnish with chopped parsley.
  13. Serve warm as a side dish or snack.

Notes

  • Baby potatoes are ideal for their quick cooking and creamy texture. However, Yukon Gold potatoes can also be used.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
