- 1/4 cup honey

- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, chopped (for garnish)

Instructions
- In a medium-sized bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and black pepper. Whisk until fully incorporated.
- Place the pork tenderloin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it’s well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, preferably a few hours or overnight.
- Preheat the oven to 400°F (200°C). Remove the pork from the marinade, letting excess drip off, and reserve the marinade.
- In a large oven-safe skillet, heat a tablespoon of oil over medium-high heat. Sear the pork on all sides for about 2-3 minutes per side until browned.
- Pour the reserved marinade over the pork in the skillet. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Once done, remove the pork from the oven and let it rest for 5-10 minutes to allow juices to redistribute.
- While the pork rests, place the remaining marinade in the skillet over medium heat and bring to a gentle simmer.
- In a small bowl, mix cornstarch with water to create a slurry. Slowly whisk the slurry into the simmering marinade and cook for another 2-3 minutes until thickened. Add water if it becomes too thick.
- Slice the rested pork into 1/2 inch thick medallions and arrange on a serving platter. Drizzle the thickened sauce over the top.
- Garnish with chopped green onions and sesame seeds. Serve with steamed rice or stir-fried vegetables.
