- 8 oz (225 g) pasta of your choice
- 1 lb (450 g) honey garlic sausages, sliced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup chicken or vegetable broth
- 1/4 cup honey
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- Bring a large pot of salted water to a boil. Add about a tablespoon of salt to enhance the pasta’s flavor.
- Once boiling, add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain and set aside. Toss with a little olive oil to prevent sticking.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the sliced honey garlic sausages and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from skillet and set aside, leaving drippings in the skillet.
- In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and diced red bell pepper, sautéing for another 2-3 minutes until tender and fragrant.
- Toss in halved cherry tomatoes, dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional 2-3 minutes until tomatoes soften.
- Pour in chicken or vegetable broth and honey, stirring to combine. Bring to a gentle simmer and cook for about 5 minutes to meld flavors.
- Taste and season with salt and pepper as needed.
- Return cooked sausages to the skillet, stirring to combine with sauce and vegetables. Simmer for another 2-3 minutes to heat through.
- Add drained pasta, tossing until well coated with sauce. If too dry, add reserved pasta water to reach desired consistency.
- Remove from heat and serve hot, garnished with freshly chopped parsley and grated Parmesan cheese. Enjoy with a side salad or crusty bread!
