  • 1 lb (450 g) honey garlic sausages, sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup honey
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add about a tablespoon of salt to enhance the pasta’s flavor.
  2. Once boiling, add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain and set aside. Toss with a little olive oil to prevent sticking.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  4. Add the sliced honey garlic sausages and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from skillet and set aside, leaving drippings in the skillet.
  5. In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
  6. Add minced garlic and diced red bell pepper, sautéing for another 2-3 minutes until tender and fragrant.
  7. Toss in halved cherry tomatoes, dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional 2-3 minutes until tomatoes soften.
  8. Pour in chicken or vegetable broth and honey, stirring to combine. Bring to a gentle simmer and cook for about 5 minutes to meld flavors.
  9. Taste and season with salt and pepper as needed.
  10. Return cooked sausages to the skillet, stirring to combine with sauce and vegetables. Simmer for another 2-3 minutes to heat through.
  11. Add drained pasta, tossing until well coated with sauce. If too dry, add reserved pasta water to reach desired consistency.
  12. Remove from heat and serve hot, garnished with freshly chopped parsley and grated Parmesan cheese. Enjoy with a side salad or crusty bread!
