  • 20 large cremini or button mushrooms
  • 1 pound Italian sausage (mild or spicy, based on preference)
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for greasing the baking dish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms gently with a damp paper towel to remove any dirt. Avoid rinsing them under water.
  3. Carefully remove the stems from the mushrooms using a small paring knife. Set the caps aside and finely chop the stems.
  4. In a large skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and sauté for about 3-4 minutes until softened.
  5. Add the minced garlic and cook for an additional minute, stirring frequently.
  6. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  7. Remove the skillet from heat and let it cool for a few minutes.
  8. In a large mixing bowl, combine the sausage mixture with breadcrumbs, Parmesan cheese, mozzarella cheese, chopped parsley, and red pepper flakes (if using). Season with salt and pepper to taste. Mix until well combined.
  9. Fill each mushroom cap generously with the sausage mixture, mounding it slightly on top.
  10. Place the stuffed mushrooms in a greased baking dish. If there’s leftover filling, sprinkle it around the mushrooms.
  11. Lightly spray the tops of the stuffed mushrooms with cooking spray or drizzle with olive oil.
  12. Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  13. Remove from the oven and let cool for a few minutes before serving.
