- ½ cup buttermilk
- ¼ cup fresh lemon juice (about 1–2 lemons)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and lemon juice. Start and end with the flour mixture. Mix until just combined.
- Grease a 9×5-inch loaf pan with butter or non-stick cooking spray. Optionally, line the bottom with parchment paper.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Place the loaf pan in the preheated oven and bake for 50-60 minutes, checking for doneness around the 50-minute mark. The cake is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Remove the loaf from the oven and let it cool in the pan for about 10-15 minutes.
- Carefully turn the loaf out onto a wire rack to cool completely.
- In a small bowl, combine 1 cup of powdered sugar with 2-3 tablespoons of fresh lemon juice. Whisk until smooth, adjusting the lemon juice for a pourable consistency.
- Once the cake is completely cool, drizzle the glaze over the top.
- Slice the cake into even pieces, aiming for about 1-inch thick slices.
- Serve on a platter or individual plates, perfect with a cup of tea or coffee.
