  • 1 cup whole wheat breadcrumbs

  • 1 teaspoon paprika

  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon olive oil (optional, for extra crispiness)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchinis thoroughly under cold water and pat them dry with a clean kitchen towel.
  3. Slice the zucchinis into fry shapes, about 1/4 inch thick.
  4. Place the zucchini sticks on a clean kitchen towel or paper towels, sprinkle with a little salt, and let them sit for 10-15 minutes to draw out excess moisture.
  5. In one bowl, crack the two large eggs and whisk until well combined.
  6. In another bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  7. After the zucchini has rested, pat them dry with a paper towel.
  8. Dip each zucchini stick into the egg wash, ensuring it’s fully coated, then roll it in the breadcrumb mixture, pressing gently to adhere. Place on a baking sheet lined with parchment paper.
  9. For extra crispiness, drizzle a tablespoon of olive oil over the breaded zucchini fries or lightly spray them with cooking spray.
  10. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
