- 2 medium zucchinis
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika

- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon olive oil (optional, for extra crispiness)
- Cooking spray (for baking)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the zucchinis thoroughly under cold water and pat them dry with a clean kitchen towel.
- Slice the zucchinis into fry shapes, about 1/4 inch thick.
- Place the zucchini sticks on a clean kitchen towel or paper towels, sprinkle with a little salt, and let them sit for 10-15 minutes to draw out excess moisture.
- In one bowl, crack the two large eggs and whisk until well combined.
- In another bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
- After the zucchini has rested, pat them dry with a paper towel.
- Dip each zucchini stick into the egg wash, ensuring it’s fully coated, then roll it in the breadcrumb mixture, pressing gently to adhere. Place on a baking sheet lined with parchment paper.
- For extra crispiness, drizzle a tablespoon of olive oil over the breaded zucchini fries or lightly spray them with cooking spray.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and let cool for a couple of minutes before serving.
- Serve warm with your favorite dipping sauce, such as yogurt dip, spicy marinara, or ranch dressing.
