  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Start by gathering all your ingredients. This makes the cooking process smoother and more enjoyable.
  2. In a medium bowl, combine the chicken pieces with salt, pepper, and half of the soy sauce. Let it marinate for about 15-20 minutes.
  3. While the chicken is marinating, prepare the sauce. In a small bowl, mix the remaining soy sauce, honey, and cornstarch. Stir until the cornstarch is fully dissolved. Set the sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  5. Add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  6. Remove the chicken from the skillet and set it aside.
  7. In the same skillet, add another tablespoon of vegetable oil. Add the sliced onion, garlic, and ginger. Sauté for about 2-3 minutes until the onion becomes translucent.
  8. Add the sliced red and green bell peppers. Stir-fry for an additional 3-4 minutes until the peppers are tender but still crisp.
  9. Add the cooked chicken back into the skillet with the sautéed vegetables.
  10. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything.
  11. Cook for an additional 2-3 minutes, stirring frequently, until the sauce has thickened.
  12. Gently fold in the diced mangoes. Cook for another minute to warm the mangoes slightly.
