- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or noodles, for serving
Instructions
- Start by gathering all your ingredients. This makes the cooking process smoother and more enjoyable.
- In a medium bowl, combine the chicken pieces with salt, pepper, and half of the soy sauce. Let it marinate for about 15-20 minutes.
- While the chicken is marinating, prepare the sauce. In a small bowl, mix the remaining soy sauce, honey, and cornstarch. Stir until the cornstarch is fully dissolved. Set the sauce aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the sliced onion, garlic, and ginger. Sauté for about 2-3 minutes until the onion becomes translucent.
- Add the sliced red and green bell peppers. Stir-fry for an additional 3-4 minutes until the peppers are tender but still crisp.
- Add the cooked chicken back into the skillet with the sautéed vegetables.
- Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything.
- Cook for an additional 2-3 minutes, stirring frequently, until the sauce has thickened.
- Gently fold in the diced mangoes. Cook for another minute to warm the mangoes slightly.
- Give everything a final stir, taste, and adjust seasoning if necessary.
- Plate the stir fry over a bed of cooked rice or noodles.
