Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 8 ounces fettuccine or linguine pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves, for garnish
- Juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the fettuccine or linguine pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
- Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 1 minute until fragrant.
- Add shrimp in a single layer, season with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until fully cooked. Remove shrimp and set aside.
- In the same skillet, add halved cherry tomatoes and sauté for 3-4 minutes until softened.
- Pour in heavy cream and stir to combine. Bring to a gentle simmer for 3-5 minutes until slightly thickened.
- Stir in grated Parmesan cheese and Italian seasoning until melted and creamy. Adjust consistency with reserved pasta water if needed.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes.
- Add cooked pasta to the skillet and toss until well coated with the sauce. Add more reserved pasta water if needed.
- Gently fold in the cooked shrimp, ensuring even distribution.
- Squeeze lemon juice over the pasta and toss to combine.
- Plate the pasta in generous portions and garnish with fresh basil leaves. Optionally, sprinkle extra Parmesan cheese on top.
- Serve with garlic bread or a fresh salad for a complete meal. Enjoy!
