  • 8 ounces fettuccine or linguine pasta

  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Juice of 1 lemon

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the fettuccine or linguine pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  3. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 1 minute until fragrant.
  5. Add shrimp in a single layer, season with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until fully cooked. Remove shrimp and set aside.
  6. In the same skillet, add halved cherry tomatoes and sauté for 3-4 minutes until softened.
  7. Pour in heavy cream and stir to combine. Bring to a gentle simmer for 3-5 minutes until slightly thickened.
  8. Stir in grated Parmesan cheese and Italian seasoning until melted and creamy. Adjust consistency with reserved pasta water if needed.
  9. Taste and adjust seasoning with salt, pepper, or red pepper flakes.
  10. Add cooked pasta to the skillet and toss until well coated with the sauce. Add more reserved pasta water if needed.
  11. Gently fold in the cooked shrimp, ensuring even distribution.
  12. Squeeze lemon juice over the pasta and toss to combine.
  13. Plate the pasta in generous portions and garnish with fresh basil leaves. Optionally, sprinkle extra Parmesan cheese on top.
  14. Serve with garlic bread or a fresh salad for a complete meal. Enjoy!
