  • 2 pounds lean ground beef (85-90%)
  • 1 large can (16 ounces) refried beans
  • 1 standard (8-ounce) block of cream cheese, softened
  • 1 (16-ounce) container sour cream
  • 2 cans (10 ounces each) Rotel (Diced Tomatoes with Green Chilies), undrained
  • 34 cups cheese blend (Tex-Mex blend, Colby Jack, or a mix of sharp cheddar and Monterey Jack)
  • 2 packets (1 ounce each) taco seasoning
  • 1/2 cup beef broth
  • Optional garnish: chopped green onions, fresh cilantro, sliced jalapeños (fresh or pickled), salsa or guacamole

Instructions

  1. In a large skillet or Dutch oven, brown your 2 pounds of lean ground beef over medium-high heat. Break it up with a spoon as it cooks. Once it's fully cooked and no longer pink, drain off any excess grease thoroughly.
  2. Return the drained beef to the skillet. Stir in both packets of taco seasoning, or your homemade blend, ensuring the beef is well coated. Pour in the two cans of Rotel (undrained) and the 1/2 cup of beef broth. Bring the mixture to a simmer, then reduce the heat to low and let it cook gently for about 5-7 minutes.
  3. While the beef simmers, in a medium mixing bowl, combine the softened cream cheese, sour cream, and the can of refried beans. Stir well until the mixture is completely smooth and thoroughly combined.
  4. Preheat your oven to 375°F (190°C). Grab a 9×13-inch baking dish. Spread the creamy refried bean mixture evenly across the bottom of the dish.
  5. Spoon the seasoned beef and Rotel mixture evenly over the refried bean layer. Use the back of the spoon to gently spread it out.
  6. Generously sprinkle all of your shredded cheese over the beef layer.
  7. Place the baking dish in your preheated oven. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and lightly golden brown.
  8. Carefully remove the dip from the oven. Let it sit for 5 minutes before serving. Garnish with your chosen fresh toppings and serve hot with plenty of sturdy tortilla chips, Fritos, or veggie sticks for dipping.
