Ingredients

Scale
  • 1 pound ground beef (preferably lean)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled (optional)
  • Fresh parsley, chopped (for garnish)
  • Cooked rice or quinoa (for serving)

Instructions

  1. Gather all your ingredients to streamline the cooking process. Dice the onion and red bell pepper, mince the garlic, slice the zucchini, and halve the cherry tomatoes. Measure out the dried herbs and spices.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds.
  3. Add the ground beef to the skillet, breaking it up with a spatula. Cook for 5-7 minutes until browned and no longer pink, stirring occasionally.
  4. Season the beef with salt, pepper, oregano, basil, and paprika. Stir well to combine.
  5. Add the diced red bell pepper and sliced zucchini to the skillet. Cook for 3-4 minutes until the vegetables start to soften.
  6. Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften and release their juices. Taste and adjust seasoning if necessary.
  7. If using feta cheese, sprinkle it over the stir-fry and stir to combine. Remove the skillet from heat.
  8. Serve the stir-fry over a bed of cooked rice or quinoa. Garnish with freshly chopped parsley.
  9. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over medium heat or in the microwave.
