1 tbsp olive oil
-
1 small red onion, diced
-
3 cloves garlic, minced
-
1 red bell pepper, thinly sliced
-
1 medium zucchini, chopped
-
2 cups baby spinach (or kale)
-
1 tsp dried oregano
-
1/2 tsp ground cumin
-
Salt and black pepper, to taste
-
Juice of 1/2 lemon
-
Optional toppings: crumbled feta, sliced olives, chopped parsley, tahini drizzle
Instructions
-
Heat olive oil in a large skillet over medium heat.
-
Add red onion and sauté for 2–3 minutes until slightly softened.
-
Stir in garlic, ground beef, oregano, cumin, salt, and pepper. Cook until beef is browned and crumbled, about 6–8 minutes.
-
Add bell pepper and zucchini. Cook for 5–6 minutes until vegetables are just tender.
-
Stir in spinach and cook until wilted, about 1–2 minutes.
-
Finish with a squeeze of fresh lemon juice and adjust seasoning if needed.
-
Serve warm, topped with feta, olives, or tahini if desired.
Notes
-
Customize it! Try ground turkey or lamb, or make it vegetarian with lentils or plant-based ground.
-
Add a pinch of chili flakes or harissa for a spicy kick.
-
Great over rice, quinoa, or wrapped in pita for a heartier meal.
-
Store leftovers for easy lunches—they reheat beautifully!
-
To keep it dairy-free, skip the feta and use tahini or avocado.
