1 lb lean ground beef

1 small red onion, diced

3 cloves garlic, minced

1 red bell pepper, thinly sliced

1 medium zucchini, chopped

2 cups baby spinach (or kale)

1 tsp dried oregano

1/2 tsp ground cumin

Salt and black pepper, to taste

Juice of 1/2 lemon

Instructions

Heat olive oil in a large skillet over medium heat.

Add red onion and sauté for 2–3 minutes until slightly softened.

Stir in garlic, ground beef, oregano, cumin, salt, and pepper. Cook until beef is browned and crumbled, about 6–8 minutes.

Add bell pepper and zucchini. Cook for 5–6 minutes until vegetables are just tender.

Stir in spinach and cook until wilted, about 1–2 minutes.

Finish with a squeeze of fresh lemon juice and adjust seasoning if needed.

Serve warm, topped with feta, olives, or tahini if desired.
