Ingredients

  • 1 lb lean ground beef

  • 1 tbsp olive oil

  • 1 small red onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, thinly sliced

  • 1 medium zucchini, chopped

  • 2 cups baby spinach (or kale)

  • 1 tsp dried oregano

  • 1/2 tsp ground cumin

  • Salt and black pepper, to taste

  • Juice of 1/2 lemon

  • Optional toppings: crumbled feta, sliced olives, chopped parsley, tahini drizzle

Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add red onion and sauté for 2–3 minutes until slightly softened.

  • Stir in garlic, ground beef, oregano, cumin, salt, and pepper. Cook until beef is browned and crumbled, about 6–8 minutes.

  • Add bell pepper and zucchini. Cook for 5–6 minutes until vegetables are just tender.

  • Stir in spinach and cook until wilted, about 1–2 minutes.

  • Finish with a squeeze of fresh lemon juice and adjust seasoning if needed.

 

  • Serve warm, topped with feta, olives, or tahini if desired.

Notes

  • Customize it! Try ground turkey or lamb, or make it vegetarian with lentils or plant-based ground.

  • Add a pinch of chili flakes or harissa for a spicy kick.
