Ingredients
Scale
- 4 slices of whole grain bread
- 2 cups fresh spinach, washed and dried
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1 medium tomato, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup black olives, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a large mixing bowl, combine the fresh spinach, crumbled feta cheese, shredded mozzarella cheese, sliced tomato, chopped sun-dried tomatoes, and sliced black olives. Add garlic powder, dried oregano, salt, and pepper. Drizzle in 1 tablespoon of olive oil and mix until well combined.
- Lay out the slices of whole grain bread on a clean surface. Spread a thin layer of butter on one side of each slice.
- On the unbuttered side of two slices, spoon the spinach and cheese mixture evenly. Place the other two slices on top, buttered side facing out, and gently press down.
- Heat a large skillet or griddle over medium heat. Add the remaining tablespoon of olive oil. Place the assembled sandwiches in the skillet and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes.
- Ensure the cheese is melted by gently pressing down on the sandwich. If the cheese isn’t fully melted, lower the heat and cover the skillet for a minute or two.
- Remove from the skillet and let rest for a minute. Slice each sandwich in half diagonally and serve warm, optionally with marinara sauce for dipping or a fresh salad.
Notes
- Customize the filling with roasted red peppers, artichoke hearts, or grilled chicken for extra protein.
- For a spicy kick, add sliced jalapeños or red pepper flakes.
- For a vegan version, use plant-based cheeses and vegan butter.
