  • 4 slices of whole grain bread
  • 2 cups fresh spinach, washed and dried
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium tomato, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup black olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Butter for grilling

Instructions

  1. In a large mixing bowl, combine the fresh spinach, crumbled feta cheese, shredded mozzarella cheese, sliced tomato, chopped sun-dried tomatoes, and sliced black olives. Add garlic powder, dried oregano, salt, and pepper. Drizzle in 1 tablespoon of olive oil and mix until well combined.
  2. Lay out the slices of whole grain bread on a clean surface. Spread a thin layer of butter on one side of each slice.
  3. On the unbuttered side of two slices, spoon the spinach and cheese mixture evenly. Place the other two slices on top, buttered side facing out, and gently press down.
  4. Heat a large skillet or griddle over medium heat. Add the remaining tablespoon of olive oil. Place the assembled sandwiches in the skillet and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes.
  5. Ensure the cheese is melted by gently pressing down on the sandwich. If the cheese isn’t fully melted, lower the heat and cover the skillet for a minute or two.
  6. Remove from the skillet and let rest for a minute. Slice each sandwich in half diagonally and serve warm, optionally with marinara sauce for dipping or a fresh salad.
