Ingredients
Scale
- 2 tablespoons butter
- 1 cup chopped onions
- 2 cups chopped mushrooms (cremini, shiitake, or button)
- 2 teaspoons fresh thyme leaves
- Salt to taste
- Pepper to taste
- 1 cup vegetable broth (low-sodium)
- ½ cup heavy cream
- 1 cup shredded Gruyere cheese
- Puff pastry (store-bought or homemade)
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add 1 cup of chopped onions and sauté until translucent, about 5 minutes.
- Stir in 2 cups of chopped mushrooms and cook until they release their moisture and become tender, about 8-10 minutes.
- Sprinkle in 2 teaspoons of fresh thyme leaves, salt, and pepper to taste.
- Pour in 1 cup of vegetable broth and ½ cup of heavy cream. Let the mixture simmer for about 5 minutes until slightly thickened.
- Stir in 1 cup of shredded Gruyere cheese until melted and smooth.
- While the filling cools, preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness.
- Cut out circles that are slightly larger than the diameter of your muffin tin cups.
- Grease a muffin tin and place the pastry circles into each cup, pressing gently to fit.
- Fill each pastry cup with the mushroom and cheese filling, then top with another circle of pastry.
- Crimp the edges to seal and cut a few slits in the top for steam to escape.
- Brush the tops with an egg wash (1 egg whisked with 1 tablespoon of water) or milk for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Allow the mini pot pies to cool for a few minutes before serving.

Keywords: Be careful not to overfill the pastry cups; otherwise, the filling may spill over during baking. If your puff pastry gets too warm while working with it, pop it back in the fridge for a few minutes to maintain its flakiness.
