- 8 ounces egg noodles
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup carrots, julienned
- 1 cup bell pepper, sliced (any color)
- 1 cup green onions, chopped
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt to taste
- Sesame seeds for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the egg noodles and cook according to package instructions (6-8 minutes) until al dente, stirring occasionally.
- Drain the noodles in a colander and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and cook for an additional 30 seconds, stirring frequently.
- Increase heat to high, add the ground beef, and cook until browned (5-7 minutes), breaking it apart with a spatula. Drain excess fat if necessary.
- Add the julienned carrots and sliced bell pepper to the skillet. Stir-fry for 3-4 minutes until tender but crisp.
- In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, ground ginger, black pepper, and red pepper flakes (if using).
- Pour the sauce over the beef and vegetable mixture, stirring to coat evenly. Simmer for 2-3 minutes.
- Add the cooked egg noodles to the skillet and gently toss everything together using tongs or a spatula.
- If the mixture seems dry, add a splash of water or additional soy sauce.
- Taste and adjust seasoning with salt if needed.
- Remove the skillet from heat and stir in the chopped green onions, reserving some for garnish.
- Optionally, sprinkle sesame seeds over the top.
- Serve hot, garnished with reserved green onions and additional sesame seeds if desired.

- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To reheat, place noodles in a skillet over medium heat with a splash of water or soy sauce to prevent sticking.
