Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian seasoned)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness of about ½ inch.
- Set up a breading station: In one shallow dish, add flour seasoned with salt and pepper. In a second dish, beat the eggs. In a third dish, combine breadcrumbs, garlic powder, onion powder, oregano, basil, and a pinch of salt and pepper.
- Coat each chicken breast in flour, shaking off excess.
- Dip the floured chicken into the beaten eggs, ensuring full coverage.
- Press the chicken into the breadcrumb mixture, coating evenly on both sides.
- Set the breaded chicken aside on a plate or baking sheet.
- Heat olive oil in a large skillet over medium heat.
- Add breaded chicken breasts to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through. Cook in batches if necessary.
- Transfer cooked chicken to a baking dish, draining excess oil if desired.
- Pour about ½ cup of marinara sauce over each chicken breast.
- Generously sprinkle shredded mozzarella cheese over the chicken.
- Add grated Parmesan cheese on top of the mozzarella.
- Place the baking dish in the preheated oven and bake for 20-25 minutes, or until cheese is melted and bubbly, and chicken reaches an internal temperature of 165°F (74°C).
- For a golden-brown top, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
- Remove the chicken from the oven and let it rest for about 5 minutes.
- Serve each chicken breast on a plate, spooning extra marinara sauce over the top.
- Garnish with fresh basil leaves if desired.
