  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness of about ½ inch.
  3. Set up a breading station: In one shallow dish, add flour seasoned with salt and pepper. In a second dish, beat the eggs. In a third dish, combine breadcrumbs, garlic powder, onion powder, oregano, basil, and a pinch of salt and pepper.
  4. Coat each chicken breast in flour, shaking off excess.
  5. Dip the floured chicken into the beaten eggs, ensuring full coverage.
  6. Press the chicken into the breadcrumb mixture, coating evenly on both sides.
  7. Set the breaded chicken aside on a plate or baking sheet.
  8. Heat olive oil in a large skillet over medium heat.
  9. Add breaded chicken breasts to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through. Cook in batches if necessary.
  10. Transfer cooked chicken to a baking dish, draining excess oil if desired.
  11. Pour about ½ cup of marinara sauce over each chicken breast.
  12. Generously sprinkle shredded mozzarella cheese over the chicken.
  13. Add grated Parmesan cheese on top of the mozzarella.
  14. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until cheese is melted and bubbly, and chicken reaches an internal temperature of 165°F (74°C).
  15. For a golden-brown top, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
  16. Remove the chicken from the oven and let it rest for about 5 minutes.
  17. Serve each chicken breast on a plate, spooning extra marinara sauce over the top.
  18. Garnish with fresh basil leaves if desired.
