These no-bake brownie bites are a healthy and delicious treat made with dates, walnuts, and cocoa powder. Easy to prepare and customizable, they make for a perfect snack or guilt-free dessert. Enjoy them chilled for a rich, chocolatey flavor!
Ingredients
Scale
- 1 cup pitted dates
- 1 cup walnuts (or any nuts of your choice)
- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond butter (or any nut butter)
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup shredded coconut (optional, for rolling)
Instructions
- Start by gathering all your ingredients on the countertop.
- In a food processor, add the pitted dates. If your dates are a bit dry, you can soak them in warm water for about 10 minutes to soften them up. Drain them well before adding to the processor.
- Next, add the walnuts to the food processor. If you prefer a smoother texture, you can pulse them a bit before adding the other ingredients.
- Now, it’s time to add the unsweetened cocoa powder.
- Next, add the almond butter.
- Pour in the vanilla extract and sprinkle in the sea salt.
- Now, blend everything together in the food processor. Start on a low speed and gradually increase.
- If you’re adding mini chocolate chips, now is the time to fold them in.
- Once your mixture is ready, it’s time to form the brownie bites.
- Take a small amount of the mixture (about 1 tablespoon) and roll it into a ball.
- If you want to add a little extra flair, you can roll the brownie bites in shredded coconut.
- Place the formed brownie bites on a parchment-lined baking sheet or a plate.
- Once all your brownie bites are formed, it’s time to chill them.
- Place the brownie bites in the refrigerator for at least 30 minutes.
- While they’re chilling, you can clean up your workspace.
- After the chilling time is up, take the brownie bites out of the fridge or freezer.
- Transfer them to a serving platter or keep them in an airtight container in the fridge.
- These brownie bites are perfect for a quick snack, a healthy dessert, or even a party treat.
Notes
- Feel free to substitute the walnuts with any nuts you prefer, such as almonds or pecans.
- You can also add other mix-ins like dried fruit or seeds for added texture and flavor.
- For a vegan option, ensure that the chocolate chips used are dairy-free.
