  • Author: Lily
  • Total Time: 45 minutes
  • Yield: 24 bites 1x

Description

These no-bake brownie bites are a healthy and delicious treat made with dates, walnuts, and cocoa powder. Easy to prepare and customizable, they make for a perfect snack or guilt-free dessert. Enjoy them chilled for a rich, chocolatey flavor!

Ingredients

Scale
  • 1 cup pitted dates
  • 1 cup walnuts (or any nuts of your choice)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond butter (or any nut butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup shredded coconut (optional, for rolling)

Instructions

  1. Start by gathering all your ingredients on the countertop.
  2. In a food processor, add the pitted dates. If your dates are a bit dry, you can soak them in warm water for about 10 minutes to soften them up. Drain them well before adding to the processor.
  3. Next, add the walnuts to the food processor. If you prefer a smoother texture, you can pulse them a bit before adding the other ingredients.
  4. Now, it’s time to add the unsweetened cocoa powder.
  5. Next, add the almond butter.
  6. Pour in the vanilla extract and sprinkle in the sea salt.
  7. Now, blend everything together in the food processor. Start on a low speed and gradually increase.
  8. If you’re adding mini chocolate chips, now is the time to fold them in.
  9. Once your mixture is ready, it’s time to form the brownie bites.
  10. Take a small amount of the mixture (about 1 tablespoon) and roll it into a ball.
  11. If you want to add a little extra flair, you can roll the brownie bites in shredded coconut.
  12. Place the formed brownie bites on a parchment-lined baking sheet or a plate.
  13. Once all your brownie bites are formed, it’s time to chill them.
  14. Place the brownie bites in the refrigerator for at least 30 minutes.
  15. While they’re chilling, you can clean up your workspace.
  16. After the chilling time is up, take the brownie bites out of the fridge or freezer.
  17. Transfer them to a serving platter or keep them in an airtight container in the fridge.
  18. These brownie bites are perfect for a quick snack, a healthy dessert, or even a party treat.

Notes

  • Feel free to substitute the walnuts with any nuts you prefer, such as almonds or pecans.
  • You can also add other mix-ins like dried fruit or seeds for added texture and flavor.
  • For a vegan option, ensure that the chocolate chips used are dairy-free.
