- 2–3 tablespoons non-alcoholic gin alternative

- 1 cup heavy whipping cream
Instructions
- Crush about 10-12 gingerbread cookies in a food processor until they resemble fine crumbs. If you don’t have a food processor, you can place the cookies in a zip-lock bag and crush them with a rolling pin.
- In a bowl, combine the crushed gingerbread cookies with 4 tablespoons of melted butter. Stir until the crumbs are coated and slightly moist.
- Divide the gingerbread mixture evenly among your serving cups, pressing it down to form a solid base. Set aside to chill while you prepare the cheesecake filling.
- In a large mixing bowl, beat 8 ounces of softened cream cheese until smooth. Gradually add in ½ cup of powdered sugar and continue to beat until well combined.
- Mix in 2-3 tablespoons of your non-alcoholic gin alternative, 1 teaspoon of vanilla extract, and a pinch of cinnamon and nutmeg. Taste and adjust the sweetness or spice levels to your liking.
- In a separate bowl, whip 1 cup of heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
- Spoon or pipe the cheesecake filling over the gingerbread base in each cup, smoothing the tops.
- Refrigerate the cheesecake cups for at least 4 hours, or overnight if possible.
- Before serving, you can add whipped cream, crushed gingerbread cookies, or a sprinkle of cinnamon on top for an extra festive touch.
