Instructions

  1. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Fold in the rolled oats, chocolate chips, and nuts (if using) with a spatula.
  6. Cover the bowl with plastic wrap or transfer the dough to an airtight container. Chill in the refrigerator for at least 30 minutes (or longer for better results).
  7. Preheat your oven to 350°F (175°C).
  8. Drop rounded balls of dough onto a prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the scoop.
