- 1.5 lbs (680g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 bell pepper (red or green), sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon black pepper (adjust to taste)
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 1 tablespoon sesame oil
- 2 green onions, sliced (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Cut the chicken thighs into bite-sized pieces.
- In a large bowl, combine the chicken with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a sprinkle of black pepper. Mix well and let marinate for 15-20 minutes.
- While the chicken marinates, chop the onion, mince the garlic and ginger, and slice the bell pepper. Prepare the broccoli florets and snap peas.
- Heat 2 tablespoons of vegetable oil in a large pot or deep skillet over medium-high heat.
- Add the marinated chicken in a single layer and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
- In the same pot, sauté the onion, garlic, and ginger for 2-3 minutes until the onion is translucent.
- Add the bell pepper, broccoli, and snap peas, stir-frying for 4-5 minutes until tender-crisp.
- Return the cooked chicken to the pot and stir to combine.
- In a small bowl, whisk together the remaining 1/4 cup of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of black pepper, and 1/4 cup of chicken broth.
- Pour the sauce over the chicken and vegetables, stirring to coat. Let simmer for 5 minutes to thicken slightly.
- Drizzle 1 tablespoon of sesame oil over the dish and stir to combine.
- Remove from heat and garnish with sliced green onions.
- Serve the dish over cooked rice or noodles. Optionally, sprinkle sesame seeds on top for added texture.

- Adjust the amount of black pepper according to your spice preference.
- For a thicker sauce, mix an additional teaspoon of cornstarch with a tablespoon of water and add it to the pot during the simmering step.
