  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels to ensure a nice sear.
  2. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning blend all over the chicken breasts.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Sear the seasoned chicken breasts for 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink.
  5. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  6. In the same skillet, reduce heat to medium and add chicken broth, scraping up any browned bits from the bottom.
  7. Simmer the broth for 2-3 minutes to reduce slightly.
  8. Pour in the heavy cream and stir to combine. Bring to a gentle simmer and let thicken for about 5 minutes.
  9. Add halved cherry tomatoes and cook for another 2-3 minutes until softened.
  10. Toss in fresh spinach and stir until wilted, about 1-2 minutes.
  11. Return the chicken to the skillet, spooning some sauce over the top.
  12. Sprinkle grated Parmesan cheese over the chicken and sauce, then cover with a lid and simmer for an additional 5 minutes.
  13. Remove from heat and garnish with freshly chopped parsley.
