- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels to ensure a nice sear.
- In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning blend all over the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear the seasoned chicken breasts for 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink.
- Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add chicken broth, scraping up any browned bits from the bottom.
- Simmer the broth for 2-3 minutes to reduce slightly.
- Pour in the heavy cream and stir to combine. Bring to a gentle simmer and let thicken for about 5 minutes.
- Add halved cherry tomatoes and cook for another 2-3 minutes until softened.
- Toss in fresh spinach and stir until wilted, about 1-2 minutes.
- Return the chicken to the skillet, spooning some sauce over the top.
- Sprinkle grated Parmesan cheese over the chicken and sauce, then cover with a lid and simmer for an additional 5 minutes.
- Remove from heat and garnish with freshly chopped parsley.
- Serve directly from the skillet or plate with a generous scoop of the creamy sauce and veggies.
