  • 2 cups spinach (fresh or frozen)

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. Start by gathering all your ingredients. This makes the cooking process smoother and more enjoyable.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Once the oil is hot, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent.
  3. Add the minced garlic to the pot and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
  4. Toss in the bite-sized pieces of chicken. Season with salt, pepper, and half of the dried oregano and basil. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s browned on all sides and cooked through.
  5. Add the diced red bell pepper and halved cherry tomatoes to the pot. Stir everything together and let it cook for another 3-4 minutes until the peppers soften slightly.
  6. Pour the gnocchi into the pot and stir to combine with the chicken and vegetables.
  7. Pour in the chicken broth, scraping the bottom of the pot to release any flavorful bits stuck to it.
  8. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 5 minutes.
  9. After 5 minutes, remove the lid and stir in the heavy cream.
