Ingredients
- store-bought potato gnocchi
- boneless, skinless chicken breasts or thighs
- rotisserie chicken (optional)
- mushrooms or chickpeas (for vegetarian version)
- carrots
- peas
- celery
- green beans (optional)
- corn (optional)
- low-sodium chicken broth
- vegetable broth (optional)
- heavy cream or whole milk
- almond milk or coconut cream (for dairy-free alternative)
- fresh thyme
- fresh parsley
- salt
- pepper
- red pepper flakes (optional)
- olive oil
- onions
- minced garlic
Instructions
- In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Season your chicken pieces with salt and pepper, then add them to the pot. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken and set aside.
- In the same pot, add a bit more oil if needed. Toss in diced onions, carrots, and celery. Sauté for about 5 minutes until the onions become translucent. Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in your chicken or vegetable broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
- Add the gnocchi and return the cooked chicken to the pot. Stir everything together gently and let it cook for about 3-4 minutes. The gnocchi will puff up and soften.
- Reduce the heat to low and stir in your milk or cream. Then, add peas, thyme, and parsley. Let it simmer for another 5 minutes until heated through, and the sauce thickens slightly.
- Taste your One Pot Gnocchi Chicken Pot Pie and adjust the seasoning with salt and pepper as needed. If you like a bit of spice, a pinch of red pepper flakes can add some kick.
- Ladle the pot pie mixture into bowls and enjoy hot. You can garnish with additional herbs if desired.
