Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a muffin tin or line it with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground ginger, and ground cinnamon.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
- Add the honey to the butter-sugar mixture and beat until well combined.
- Add the egg and beat until fully incorporated, scraping down the sides of the bowl as needed.
- In a separate bowl, combine the buttermilk, orange zest, and fresh orange juice.
- Gradually add the dry mixture to the butter mixture, alternating with the buttermilk mixture. Start with the dry ingredients, then add some buttermilk, and repeat until everything is combined. Do not overmix; a few lumps are fine.
- Fold in the chopped crystallized ginger.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tin for about 5 minutes.
- Transfer the cakes to a wire rack to cool completely.
