- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 10–12 small flour or corn tortillas
- Cooking spray or olive oil for brushing
- Optional toppings: sour cream, guacamole, salsa, or additional cilantro
Instructions
- In a large mixing bowl, combine the shredded chicken, shredded cheese, black beans, corn, diced red onion, and chopped cilantro.
- Add the ground cumin, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until well combined.
- Preheat your oven to 425°F (220°C).
- If using corn tortillas, warm them up by wrapping in a damp paper towel and microwaving for about 30 seconds. Flour tortillas can usually be rolled without warming.
- Take a tortilla and place about 2-3 tablespoons of the filling mixture in the center.
- Roll the tortilla tightly around the filling, tucking in the sides as you go. Place seam-side down on a baking sheet lined with parchment paper.
- Repeat with remaining tortillas and filling.
- Lightly spray or brush the assembled taquitos with cooking spray or olive oil.
- Optionally, sprinkle a little salt on top.
- Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy, flipping halfway through.
- Let cool for a few minutes before serving. Transfer to a serving platter and add your favorite toppings.
Notes
- Feel free to customize the filling with your favorite ingredients, such as diced bell peppers, jalapeños, or different types of cheese.
- These taquitos are also great for meal prep and can be frozen before baking for a quick meal later on!
