  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/4 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1012 small flour or corn tortillas
  • Cooking spray or olive oil for brushing
  • Optional toppings: sour cream, guacamole, salsa, or additional cilantro

Instructions

  1. In a large mixing bowl, combine the shredded chicken, shredded cheese, black beans, corn, diced red onion, and chopped cilantro.
  2. Add the ground cumin, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until well combined.
  3. Preheat your oven to 425°F (220°C).
  4. If using corn tortillas, warm them up by wrapping in a damp paper towel and microwaving for about 30 seconds. Flour tortillas can usually be rolled without warming.
  5. Take a tortilla and place about 2-3 tablespoons of the filling mixture in the center.
  6. Roll the tortilla tightly around the filling, tucking in the sides as you go. Place seam-side down on a baking sheet lined with parchment paper.
  7. Repeat with remaining tortillas and filling.
  8. Lightly spray or brush the assembled taquitos with cooking spray or olive oil.
  9. Optionally, sprinkle a little salt on top.
  10. Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy, flipping halfway through.
  11. Let cool for a few minutes before serving. Transfer to a serving platter and add your favorite toppings.

Notes

  • Feel free to customize the filling with your favorite ingredients, such as diced bell peppers, jalapeños, or different types of cheese.
