Ingredients
Scale
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
- 1/2 cup blueberries (optional)
- Cooking spray or additional butter for greasing
- Maple syrup or honey for serving
Instructions
- In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well combined.
- In a separate bowl, whisk together 1 cup of milk, 1 large egg, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula or wooden spoon until just combined. A few lumps are okay.
- If desired, fold in 1/2 cup of chocolate chips or 1/2 cup of blueberries for added flavor.
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or melted butter.
- Spoon the batter into each muffin cup, filling them about 2/3 full.
- Bake in the preheated oven for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffin tin from the oven and let it cool for a few minutes. Use a butter knife to gently release the poppers from the tin and transfer them to a wire rack to cool completely.
- Arrange the pancake poppers on a platter. Drizzle with warm maple syrup or honey, and sprinkle with powdered sugar if desired.
- Serve with fresh fruit or yogurt for a balanced treat. Store any leftovers in an airtight container in the refrigerator and reheat in the microwave.
Notes
- Experiment with different mix-ins like chopped nuts, shredded coconut, or a swirl of peanut butter or Nutella.
- For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
- Add a pinch of cinnamon or nutmeg for a warm flavor, or make savory versions by omitting sugar and vanilla and adding cheese or herbs.
