These pancake tacos offer a delightful twist on traditional pancakes, allowing for a variety of sweet or savory fillings. Fluffy and customizable, they make for a fun breakfast or dessert option that everyone will enjoy!

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Cooking spray or additional butter for the skillet
- Fillings of your choice (e.g., scrambled eggs, cheese, bacon, avocado, salsa, fruits, whipped cream, Nutella, etc.)
Instructions
- In a large mixing bowl, combine the dry ingredients: 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well combined.
- In a separate bowl, whisk together the wet ingredients: 1 cup of milk, 1 large egg, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold together with a spatula until just combined. A few lumps are okay; do not overmix.
- Let the batter rest for about 5 minutes.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
- Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook for another 1-2 minutes until golden brown.
- Transfer cooked pancakes to a plate and cover with a kitchen towel to keep warm. Repeat with remaining batter.
- Take one pancake and place it on a flat surface. Choose your fillings.
- For savory, add scrambled eggs, shredded cheese, cooked bacon or sausage, sliced avocado, and salsa. Fold the pancake in half.
- For sweet, spread Nutella or peanut butter, add sliced bananas or strawberries, drizzle with honey or maple syrup, and sprinkle powdered sugar. Fold the pancake over the fillings.
- Serve with fresh fruit or yogurt, and whipped cream if desired.
