Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Cooking spray or additional butter for the skillet
  • Fillings of your choice (e.g., scrambled eggs, cheese, bacon, avocado, salsa, fruits, whipped cream, Nutella, etc.)

Instructions

  1. In a large mixing bowl, combine the dry ingredients: 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well combined.
  2. In a separate bowl, whisk together the wet ingredients: 1 cup of milk, 1 large egg, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold together with a spatula until just combined. A few lumps are okay; do not overmix.
  4. Let the batter rest for about 5 minutes.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
  7. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook for another 1-2 minutes until golden brown.
  8. Transfer cooked pancakes to a plate and cover with a kitchen towel to keep warm. Repeat with remaining batter.
  9. Take one pancake and place it on a flat surface. Choose your fillings.
  10. For savory, add scrambled eggs, shredded cheese, cooked bacon or sausage, sliced avocado, and salsa. Fold the pancake in half.
  11. For sweet, spread Nutella or peanut butter, add sliced bananas or strawberries, drizzle with honey or maple syrup, and sprinkle powdered sugar. Fold the pancake over the fillings.
  12. Serve with fresh fruit or yogurt, and whipped cream if desired.
