  • 1 cup all-purpose flour
  • 2 large eggs

  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup olive oil (for frying)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. In three shallow dishes, prepare: Dish 1: Flour, Dish 2: Beaten eggs, Dish 3: Breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
  5. Dredge each chicken breast in flour, dip in eggs, and coat with the breadcrumb mixture, pressing gently to adhere.
  6. In a large skillet, heat olive oil over medium-high heat until hot.
  7. Fry the breaded chicken breasts for 4-5 minutes on each side until golden brown and cooked through.
  8. Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
  9. Spread a thin layer of marinara sauce in a 9×13 inch baking dish.
  10. Place fried chicken breasts on top of the marinara sauce in the baking dish.
  11. Spoon additional marinara sauce over each chicken breast.
  12. Sprinkle shredded mozzarella cheese generously over the chicken.
  13. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly. Broil for an additional 2-3 minutes for a golden top if desired.
  14. Let the chicken rest for a few minutes, then garnish with chopped parsley.
