- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup olive oil (for frying)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt and pepper.
- In three shallow dishes, prepare: Dish 1: Flour, Dish 2: Beaten eggs, Dish 3: Breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
- Dredge each chicken breast in flour, dip in eggs, and coat with the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat olive oil over medium-high heat until hot.
- Fry the breaded chicken breasts for 4-5 minutes on each side until golden brown and cooked through.
- Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
- Spread a thin layer of marinara sauce in a 9×13 inch baking dish.
- Place fried chicken breasts on top of the marinara sauce in the baking dish.
- Spoon additional marinara sauce over each chicken breast.
- Sprinkle shredded mozzarella cheese generously over the chicken.
- Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly. Broil for an additional 2-3 minutes for a golden top if desired.
- Let the chicken rest for a few minutes, then garnish with chopped parsley.
