Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water to remove any dirt.
  3. Depending on the size of your baby potatoes, cut them in half or quarters for uniform pieces.
  4. In a large mixing bowl, combine the olive oil, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Stir well.
  5. Add the cut potatoes to the bowl with the seasoning mixture and toss until evenly coated.
  6. Line a large baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  7. Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes, tossing halfway through.
