Ingredients

  • 2 cups of cooked white rice
  • 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup of fresh pineapple chunks (or canned, drained)
  • 1 bell pepper (red or green), diced
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of cornstarch
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper, ensuring even coverage.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  3. In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch until fully dissolved. Optionally, add red pepper flakes for heat.
  4. In the same skillet, add more oil if necessary, then sauté the diced onion, bell pepper, garlic, and ginger for 3-4 minutes until the onions are translucent.
  5. Add the pineapple chunks and cook for another 2-3 minutes until caramelized.
  6. Return the chicken to the skillet, pour the sauce over the mixture, and stir to coat evenly. Simmer for 2-3 minutes until the sauce thickens. Adjust seasoning if needed.
  7. Serve over cooked rice, garnished with chopped green onions and sesame seeds. Enjoy!
