Description
This Pineapple Chicken and Rice dish combines tender chicken, fresh vegetables, and sweet pineapple over fluffy rice, creating a quick and easy meal that’s perfect for weeknight dinners or impressing guests.

- 2 cups of cooked white rice
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup of fresh pineapple chunks (or canned, drained)
- 1 bell pepper (red or green), diced
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of fresh ginger, minced
- 1/4 cup of soy sauce
- 2 tablespoons of honey
- 1 tablespoon of rice vinegar
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Season the chicken pieces with salt and pepper, ensuring even coverage.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch until fully dissolved. Optionally, add red pepper flakes for heat.
- In the same skillet, add more oil if necessary, then sauté the diced onion, bell pepper, garlic, and ginger for 3-4 minutes until the onions are translucent.
- Add the pineapple chunks and cook for another 2-3 minutes until caramelized.
- Return the chicken to the skillet, pour the sauce over the mixture, and stir to coat evenly. Simmer for 2-3 minutes until the sauce thickens. Adjust seasoning if needed.
- Serve over cooked rice, garnished with chopped green onions and sesame seeds. Enjoy!
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding a splash of water or chicken broth if needed to restore moisture.
