- 1 cup fresh pineapple juice
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups sparkling water or club soda
- 1 cup cold water
- Ice cubes
- Fresh pineapple slices, for garnish
- Fresh mint leaves, for garnish
- Optional: food coloring (pink) for a vibrant look
Instructions
- Start by cutting a ripe pineapple into quarters. Remove the skin and core, then chop the flesh into smaller chunks.
- Using a blender, puree the pineapple chunks until smooth. If you prefer a pulp-free juice, strain the mixture through a fine mesh sieve or cheesecloth into a bowl. You should have about 1 cup of fresh pineapple juice.
- Next, squeeze the lemons to extract the juice. Roll the lemons on the countertop with your palm before cutting them in half to release more juice. Strain the lemon juice to remove any seeds or pulp, yielding about 1 cup.
- In a small saucepan, combine 1 cup of granulated sugar with 1 cup of cold water.
- Heat the mixture over medium heat, stirring occasionally until the sugar completely dissolves (about 3-5 minutes). No need to boil; just ensure the sugar is fully dissolved.
- Once dissolved, remove the saucepan from heat and let it cool. Store any leftover syrup in the refrigerator for future use.
- In a large pitcher, combine the fresh pineapple juice and freshly squeezed lemon juice.
- Add the cooled simple syrup to the pitcher and stir well to combine all the flavors.
- If desired, add a few drops of pink food coloring for a fun twist. Aim for a light pink hue.
- Pour in the 4 cups of sparkling water or club soda and gently stir to combine, being careful not to lose too much carbonation.
- Fill glasses with ice cubes, preferably clear glasses to showcase the drink’s beautiful color.
- Pour the Pineapple Pink Lemonade Soda over the ice, filling each glass about three-quarters full.
- Garnish each glass with a slice of fresh pineapple and a sprig of mint. For an extra special touch, add a few lemon slices.
